The sea offers optimal conditions for wine aging. At a depth of 10-15 meters the temperatures are more stable between 8-16ºc with maximum monthly variations of 1ºc, there is no direct contact with the light (even in very lipid waters) and the environment is calm.
Some argue that just as music can influence the evolution of wines, so can the noise of the sea.
Each bottle taken from the sea is unique. The corked bottles were sealed to protect the corks.
The bottles were immersed in the Sines sea for 6 months to get evolution stage.
